HAPPY HOLIDAY RECIPE WEEK!

Author Cheryl Foggo

Cheryl's Holiday Recipe
"Super Easy Sweet Potatoes"

  • Preheat oven to 350.
  • Peel three large orange yams/sweet potatoes.
  • Slice them approximately 1/2 inch thick.
  • Boil in salted water between 5 and 10 minutes, until they have only slightly softened - do not over boil.
  • While your sweet potatoes are boiling, slice 1/2 of a large onion.
  • Put the onion in a microwaveable container along with 1/4 cup butter and 1/4 cup brown sugar. Remove potatoes from heat, drain the water.
  • Place the slices side by side in a 9X14ish cake pan or casserole dish.
  • Sprinkle with pepper.
  • Microwave the onions, butter and brown sugar around 2 minutes on medium, or until butter and sugar have melted together. Stir. Pour or spoon melted mixture, including onions, over your first layer of sweet potatoes, coating (but not smothering) each slice.
  • If you have more potatoes, create another layer, repeating the process.
  • If you run out of butter/sugar mixture, make a little more - be sure to coat each slice.
  • Bake uncovered at 350 degrees for 20 minutes or until the sweet potatoes are soft enough to cut with a fork, but not mushy.
  • Serve hot.
